Raw, unpasteurized and unfiltered beer. Refermented in the bottle. These beers are born as a tribute to the friendship between Roberto Rappuoli and Father Giancarlo, a French friar Prior of the Abbey of Frigolet with whom the recipes that are produced in the craft laboratory of the San Quirico Brewery in Val d'Orcia have been defined. They are beers prepared with selected malts and hops, unpasteurized, unfiltered and refermented in the bottle. The slight turbidity and the possible deposition of yeast on the bottom is characteristic of the production technique and does not affect the quality of the product.
