This should not be missing in any oriental kitchen! Real sumac does not contain any salt and during production the thin layer of pulp from the berries of the vinegar tree is scraped off and dried. In its pure form, real sumac is light red because no seeds are ground, which would cause bitter substances. Simply mix into the kebab, put in hearty casseroles, in yoghurt or quark dips, lentil dishes or with thyme and sesame as a za'atar mixture!
