2020 Pinot Noir Zealandia - The Hermit Ram THE HERMIT RAM - Natural Wine, Red Wine, North Canterbury, New Zealand. An earthy and hearty Pinot Noir. Spicy with long rocky tannins and excellent acidity. The grapes, sourced from several plots of organically grown grapes in North Canterbury, are destemmed and fermented with native yeasts. They receive only a gentle punchdown during fermentation and are then macerated on the skins for six weeks. Aging is done in Tinajas, Spanish clay amphorae, unfined, unfiltered and with only minimal sulfur content. The Hermit Ram Pinot Noir Zealandia brings all the complexity and diversity of the North Canterbury soils into a harmonious expression to create a unique "New Zealand-ness" in the glass.
