Whole Cocoa Beans

Composition: Whole Cocoa Beans. Cocoa beans are the seeds of the cocoa tree, which are used to make chocolate. They are extracted from the berries, which are opened at harvest and left to dry. The cocoa beans that we offer have been fermented, dried, roasted and degermed in a chocolatier. Roasting, i.e. heating to 140 to 160°C for 20 to 30 minutes, allows the development of cocoa flavors (see Maillard reactions). We remove the 50% of fat, which is called cocoa butter, for certain aromatic and pharmaceutical uses in particular. The Broad Beans thus offered exalt all their aromas and have lost only their natural Butter...to be chewed without complex...
