Origin: Ethiopia, Western Guji, Shakiso Farm Shakiso, founded in 2010 by Kebede Dhubo, is a washing station located in West Guji. At an altitude around 1850 to 2000 masl, the WS mainly produces natural coffees. About 180 people are working on the WS which encompasses a size of 64 hectares. For the natural process, the cherries are dried in the sun on so-called „African drying beds“ for approx. 18-21 days. The cherries need to be raked permanently in order to ensure a consistent drying process. The drying beds will, if needed, be covered both to protect the cherries from the hot sun and from rainfall. The coffee tastes rummy like black tea and brown sugar, floral. It is a so-called Omni Roast. That means it is suitable for the preparation as filter coffee and also as espresso. Our preferred recipes for Espresso and Filter Espresso 18g coffee in 36g beverage out 94°C water Brewing time 27 - 30 seconds Pump pressure around 8 bar.
