In short: This is an exceptional kitchen knife from the X01 Flagship Series from the renowned Chinese knife brand HEZHEN. The X01 Chopping Knife is a professional knife with a beautiful blade made of 73-layer Damascus steel with a core of 14Cr14MoVNb powder steel. Thanks to the quality of the steel and the advanced vacuum heat-treatment technique, the knife has a very high hardness (60-64 HRC) and remains sharp for an exceptionally long time. The knife is carefully finished down to the finest detail and perfectly balanced beyond the head, making it a pleasure to work with. The handle, made from European Olive wood, offers a comfortable and ergonomic grip.   Material and production method - The design of the X01 Flagship series designed by Steve Cheng won the gold prize at the London Design Awards - By processing the steel with advanced vacuum heat treatment, the steel has a high hardness and a high sharpness retention. -The core of the blade is made of 14Cr14MoVNb. The high carbon content in this steel ensures a very high hardness (60-64 HRC) and the presence of Vanadium and Niobium prevents rust and wear. -The core of the blade is surrounded on both sides by alternating layers of high and low carbon stainless steel (316 / 316L stainless steel). Because the blade slopes towards the edge, the 36 alternating layers become clearly visible, creating the artistic raindrop damascus pattern of the knife. -Almost the entire production process is completed by hand. The knife is polished and finished by hand by professionals to achieve optimal sharpness and the correct cutting angle of 15 degrees. -The unique and beautifully finished handle is made of European Olive wood.  Use Chopping knifeA chopping knife is a lot thicker and heavier than other kitchen knives and is immediately noticeable because of the wide blade. Unlike an axe, a chopping knife is mainly used as a normal kitchen knife and is therefore very versatile. It can be used for the preparation of almost all vegetables, meat and herbs. The wide blade is useful for crushing food, wiping it off the cutting board and can help protect your fingers when chopping. Of course, this chopping knife is also suitable for cutting through thin and/or soft bones and tendons. For the harder pieces of bone, we recommend a hatchet / butcher's knife, which is sturdier due to the larger cutting angle. This starts with cleaning the knife immediately after use. The knife should be cleaned by hand under the warm tap, not in the dishwasher. The dishwasher can damage both the blade and the handle of the knife and causes the sharpness of the knife to decrease much faster. After cleaning, we recommend storing the knives in a dry place.   Over time, a knife wears out, making it less sharp. Burrs will appear on the edge and you will notice that cutting is less easy than before. Keeping the knife sharp can be done with the help of a sharpening steel and/or a sharpening stone (or grinding machine). A sharpening steel is intended to regularly remove burrs from the edge in order to make the knife sharp again. However, after a lot of wear and tear, the sharpening steel will no longer be sufficient. Then it's time to sharpen the knife. You can do this yourself with a sharpening stone or grinding machine, but if you have no experience in this, you can also have it done by a professional knife sharpener.   Please note: Sharpening knives with a high hardness (58+ HRC) is only possible with a sharpening steel with an exceptionally high hardness.
