The heat-treated steel ensures a high hardness (58-62 HRC) and an extremely sharp edge with a high sharpness retention. The knife is beautifully rounded and finished in detail on all sides and is perfectly balanced at the beginning of the blade (the bolster). Over time, a knife wears out, making it less sharp. Burrs will appear on the edge and you will notice that cutting is less easy than before.
