ZUIKAN AIGAMO Japanese sake Junmai

A sake produced with rice grown using the Aigamo method: ducks are raised in the rice fields so that they eat harmful insects, thus reducing the use of chemicals! The nose is simple, effective. We smell water fruits like pear and green apple, a touch of cucumber and fresh herbs, and a sweet side reminiscent of rice pudding. On the second nose, notes of cereals such as wheat will stand out as well as yellow stone fruits such as peach. On the attack there is a nice freshness that encompasses the mouth. An acidity emerges and gradually gives way to a salinity in the middle of the mouth which continues and gains momentum on the finish. The aroma is very discreet with water fruits (pear, apple) and cereals such as rice. This salinity is surprising and gives substance to this discreet sake. The finish is short, allowing future gastronomic pairings to express themselves fully. To be enjoyed in a wine glass, at room temperature.
