In the warm seas surrounding the Canary Islands lives a tuna called Yellowfin, which is caught on a hook because it is small. Worked, cooked, cut and canned by hand on the same day, it is never frozen and therefore keeps all its organoleptic characteristics intact. This tuna has a soft pink color (for this reason it is also called "Almarosada"), compact flesh and an unmistakable flavour. Before being placed on the market, it is left to mature in oil for three months.
