Rye flour will add to your preparations a typical flavor, more pronounced than wheat, slightly acidic with a little sweet touch. Rye flour has a gray color which is synonymous with its richness in fiber, vitamins (from group B) and minerals (especially potassium, phosphorus and iron). Another advantage of rye flour is its low gluten content. It needs to be combined with another wheat flour to make leavened breads. Darker and heavier, rye bread has a real nutritional value. Among other things, it goes wonderfully with salted butter, cheeses, and seafood platters.
