Angelo Parodi, to prepare these fillets in oil, uses only tuna caught in the Azores archipelago and in the summer, when the meat is softer. The best fillets, processed fresh on the fishing site, are selected and packaged by hand one by one, then adding fine olive oil in which they are marinated for a long time.
