* "Mafalda" is the oldest lard shop in Colonnata, already in existence in 1928, when the "lard" was only the poor companatico of the quarrymen. Thanks to her resourcefulness, Mafalda Guadagni was able to make her personality shine even in an era and culture dominated by men. Also for Colonnata lard it is always necessary to identify the producer because each producer has his own personal use and quantity of ingredients for processing and maturing the product.
