A citrus scent that sparkles in the mouth and an aniseed aftertaste for this staple of Chinese cuisine. Sichuan pepper (or Sechuan) takes its name from a region of central China where it has traditionally been cultivated for centuries. This very fragrant berry has a slight numbing property that slightly numbs the palate, before releasing its peppery, discreetly lemony and woody taste. It is part of the composition of the famous five-spice blend. Sichuan pepper is the perfect addition to meat and poultry dishes as well as starches, but can also be used to flavor salads or desserts, especially chocolate ones.
