Exotic Jam - GINGER - 250g

GINGER : Queen spice in the tropics, ginger harvested in the Itasy region, in the Center West of Madagascar, spice up savory dishes but also goes very well with sugar, as long as the latter lets it express itself. This jam first displays a lively and delicate bouquet before spreading a sweet warmth on the tongue to which lime zest gives a more fruity note. Then, the ginger ends up gently vanishing, leaving peppery colors on the length. Ginger jam can also spice up fresh cheese, dress the sauce of duck breast, or give an original shine to the vinaigrette of a crunchy salad of arugula, mesclun and citrus fruits.
