During a trip he fell in love with a farm: El Zorro Azul. Didier and Liliana, the owners of the farm, and Philippe decide to work together to rebuild this farm, to plant very specific varieties and transform the farm into agroforestry. This farm now serves as a training site for surrounding producers who also learn to develop farms in an eco-responsible dynamic and with great respect for biodiversity. The particularity of this coffee: What makes this coffee special is its “Gesha” or “Geisha” variety. It is a variety discovered in 1931 near the village of Gesha in Ethiopia. She then traveled to Costa Rica and then Panama. This variety was a source of hope for coffee growers who wanted to find alternatives to varieties sensitive to rust. Gesha played its role but quickly the producers realized that this variety was difficult to cultivate, particularly due to its fragility. In 2005, in Panama, Gesha returned to the forefront thanks to producers who won an award of excellence, since this variety has been very popular! It’s the Champagne of coffee.
