This cephalopod, like the octopus, requires a very delicate manufacturing process, since in addition to a complete cleaning, it requires a cooking treatment with a high salt content to collect its point. Once it has been turned over to complete its cleaning, it is filled manually and then the sauce made with olive oil, onion and tomato is made, acquiring the dark color produced by the squid's own ink.
