Rum PANELA

The panela also called rapadura, piloncillo ... depending on the country of production, is a sugar made from fresh cane juice. It is evaporated by gentle cooking until obtaining a solid sugar loaf. We import it from the Valle del Cauca in Colombia. Today there are around 20,000 producers (called trapiche) across the country. These are often small sugar cane processing facilities. Almost everything is still manual there. The canes are harvested with a machete and transported to the nearest trapiche, on donkeys. The slow cooking of this sugar creates intense aromas of caramel, licorice and vanilla which are immediately identifiable in this rum. 43% vol. alc
