
This vintage is the result of an experiment launched more than ten years ago within the estate. This innovative approach consisted of promoting the expression of an indigenous yeast specific to cider, in order to reveal the full singularity of its aromatic potential. The result is a cider of great complexity, which displays a unique aromatic palette, mixing fruity (apple, pear) and floral (white flowers, lime blossom) notes, perfectly balanced. This vintage is distinguished by a silky roundness in the mouth, accompanied by a controlled acidity which supports a full and harmonious structure. The texture is ample, with a length in the mouth which testifies to the precision and rigor of the winemaking process. The balance between acidity, sweetness and roundness gives this cider an elegance comparable to that of the grands crus. It has interesting aging potential, evolving with finesse over time.
