Vin Santo di Montepulciano D.O.C. – Amber yellow colour. Scent of jasmine, cherry in alcohol, dried fruit and bread crust. The notes of spices, such as cinnamon, nutmeg, and those of ripe fruits, such as apricot compotes, leave a full, soft and slightly acidic palate with a sweet aftertaste. The wine should be served cold, preferably refrigerated beforehand at 5 degrees. Excellent for solitary meditations, to accompany dry biscuits and traditional Cantucci donuts. Production Region: Tuscany Denomination: Vin Santo di Montepulciano D.O.C. Year: From 2007 to 2011 Grape variety: Malvasia, Trebbiano Toscano Altitude: 400/500 meters above sea level Soil quality: Mainly Pliocene limestone Training system: Espalier training with Guyot pruning Density: 4,500 plants per hectare. Cultivation method: Traditional cultivation Vinification: The grapes are harvested before total maturation to be left to dry for at least 3 months, so as to lose approximately 50% of the juice. At the end of the drying period, pressing follows, and the extracted must is poured into small cherry, oak and chestnut wood barrels, where it rests for 4 years together with the sediment (mother) from the previous year. After 4 years the wine obtained is bottled. Bottle aging time: minimum 12 months
