
Its name is inspired by the Taipei 101 building, the tallest skyscraper in seismic zones with 101 floors, taking into account that the number 100 is considered the number of perfection in Asian culture, by creating 101 floors the aim was to symbolize the complexity of that building and go beyond perfection. In contrast, in Western culture, excellence is found at 10, and with these 2005 bottles, the aim is to go beyond the sensory senses thanks to the intensity given during all its years of aging. Cava made with 75% of the Xarel variety.and 25% Chardonnay. Aged over 156 months in the bottle, this is a complex, premium quality cava. A very long-aged, oxidative-style cava, displaying creamy, fine bubbles with aromas of nuts, pastries, fruit compote, notes of honey and quince. Pleasant on the palate, tasty, full-bodied, with a smooth texture and a long aftertaste reminiscent of evolutionary notes under a fresh background that makes it very balanced. Excellent cava to taste and enjoy.
