This oil was produced from walnut kernels from the southwest of France, mainly from two varieties: Franquette (delicate and fine flavor on the palate) and Granjean du Périgord Noir (marked nutty taste with a hint of bitterness) which gives an oil balanced between fruitiness and bitterness. Its flavor is particularly appreciated for enhancing winter salads (endives, etc.). Furthermore, this oil provides a rare and essential fatty acid (not synthesized by humans): alpha-linolenic acid. Deficiency of this fatty acid manifests itself through disturbances in visual function and brain functions, especially during growth. Virgin walnut oil also contains vitamin E. Do not use in cooking.
