Ground coriander, from the ground dried fruits of the herbaceous plant of the Apiaceae family, is appreciated for its subtle fragrance with citrus notes and its warm flavor with a slight bitterness, devoid of spiciness.  Coriander, also known as "Chinese parsley" and "Arabian parsley", is widely used in cooking. Its fresh leaves flavor dishes, while its dried fruits, round and light brown, are used as spices. Ground coriander is a key ingredient in various spice blends, such as colombo, tandoori or curry.  Historically, coriander has origins in the Middle East and Mediterranean region, dating back to 6,000 BC.- C. It has been used by different civilizations for culinary and medicinal purposes. The plant has often been associated with magical beliefs, notably as a powerful aphrodisiac, with anecdotes such as the Romans combining it with garlic to create love potions.  Ground coriander is a versatile spice, finding its place in both savory and sweet dishes. It is ideal with dishes based on fish, vegetables, grilled meats, eggplants, potatoes, raw vegetable salads, marinades and sauces. It goes perfectly with duck and chicken, adding a subtle flavor reminiscent of orange zest. In addition, ground coriander brings a fragrant touch to biscuits, gingerbreads and cakes.  To fully release the flavor of ground coriander, it is recommended to add it in the middle or at the end of cooking, with a proportion of approximately 2 teaspoons per dish for two people.  In terms of health, coriander is an aromatic herb belonging to the Herbs family, characterized by flavors in the leaves. It is recognized for its detoxifying properties of the digestive system and is widely used in oriental nutrition to stimulate the appetite, intestinal motility and soothe anxious states.  Coriander is listed in the French and European pharmacopoeia because of its officially recognized benefits. It facilitates digestion, reduces bloating and intestinal spasms. The plant is also known for its stimulating and tonic properties. It is part of the composition of lemon balm water, an ancient remedy used to relieve digestive disorders, temporary fatigue and anxiety.  In addition, coriander promotes sleep, helps fight insomnia, has a high content of vitamin K essential for blood clotting, and is rich in antioxidants, particularly phenolic acid, which prevent premature skin aging.
