
The light and delicate bloom of salt that forms on the surface of the water when the temperature difference between water and air is just right is called Fleur de Sel, Fiori di Sale or Flor de Sal in the Mediterranean. The delicate salt flakes grow in clay pools through evaporation in the sun and are known as one of the highest quality salts in the world. Following this tradition, we have developed our own method in our pan salt pans to grow an Alpine natural salt with a similar consistency in our boiling pans, our Alpine Fleur de Sel. Our Alpen Fleur de Sel sparkles like snow crystals in the sun. It has a little more moisture than usual, finely ground salts. This means it feels soft in the hand and has a wonderfully fine, delicately crunchy consistency in the mouth. A really special table salt that almost conjures up a gourmet dish from a butter, radish or chive bread, an egg dish, sour sausage or gray cheese.
