Savarin is a French cake strongly inspired by baba dough, with the difference that it is soaked in kirsch syrup and molded in a cake mold with a chimney, which we therefore call a savarin mold. This very characteristic shape of the savarin mold with a chimney in the center of the cake mold, can also be used to make crown-shaped cakes, brioches, homemade bread and other pastries and cakes. This savarin mold is very resistant thanks to its enamel coating, it can go in the oven up to 400°C and is perfectly resistant to shocks, scratches and cuts made with a knife, as well as fruit acids. You can therefore prepare cakes using acidic citrus fruits such as lemons without damaging the coating of your savarin mold.
