This typically southern type of dough comes from a tool called a "spindle" used as a knitting needle. By twisting a strand of pasta around a spindle, the typical shape is obtained. Red lentils have few unsaturated fats ("good fats"), lots of protein and provide numerous benefits to the body: they contain excellent amounts of vegetable protein, carbohydrates, fibre, B vitamins and minerals. Compared to other legumes, they are easier to digest and help keep the glycaemic index under control, thus suitable for those suffering from diabetes. They are excellent with pesto alla Genovese but delicious with tuna or a sausage-based condiment.
