A few kilometers from the Cave of the Birds, an archaeological site known to be one of the first places of winemaking from the Stone Age in the southern Caucasus, the vines of the Arewine estate draw their energy from clay-limestone soil. The village of Areni is also known for its peach and apricot orchards. The osmosis between plots of vines and fruit trees plays a central role in the biological enrichment of the soil and the limitation of parasites. The grapes are destemmed before being picked for two weeks and then aged in plastic fiber vats for eleven months (on the lees). The racking is carried out by gravity. No exogenous input is involved during the entire vinification and aging process. No sulphiting at bottling.
