ORIGIN OF PEPPER Black pepper comes from the Piper Nigrum pepper plant of the Piperaceae family. We all think it's a pepper picked when ripe but it's not. These grains are in fact harvested by hand before maturity, like green pepper, and then dried in the sun for several days. The enzymes contained in the berries will oxidize in the sun and cause darkening of the skin. We then obtain a grain that is dry, wrinkled, crunchy and all black on the outside! Our black pepper comes from Belem, the capital of Para in the Brazilian Amazon. The climate and the lands of the Amazon are ideal for the cultivation of pepper brought back by Japanese migrants at the beginning of the 20th century. Brazil is today one of the main producers with recognized quality and know-how, descending from the traditions of the Japanese people. Today the three main pepper growing areas are Para, Bahia and Espirito Santo but the State of Para remains the largest producer of Pepper in Brazil. Our Belem Black Pepper is of excellent quality and contains 4% Piperine, the alkaloid responsible for the pungent taste when eating pepper. FLAVORS Belem black pepper has a rich and complex flavor with incomparable aromatic power. On the nose, we detect woody and lemony notes with a hint of coriander and anise. On the palate, a slight sensation of spiciness and warmth gradually rises during tasting.
