- Our flours are produced from a mixture of 4 varieties of modern and old common wheat grown in our fields following the specifications of Organic Farming (certified by Ecocert FR-BIO-01). - They are ground using our stone grinder whose gentle grinding process keeps all the nutritional and taste qualities of the wheat. - Grinding on a stone wheel helps preserve the germ of the wheat grain (rich in fatty acids, vitamins...). To preserve these qualities, it is better to consume the flour quickly: we recommend a shelf life of 6 months (shorter than industrial flours). - The flours are naturally without additives or preservatives.
