Latin name: Citrus aurantium amara; Family Rutaceae. In the food industry, it is used to make spirits and confectionery. Small fruit tree reaching 4 to 7 m high, with thorny branches. Its entire, leathery and evergreen leaves have a broadly winged, heart-shaped petiole, characteristic of Rutaceae (citrus family). Its pretty white flowers with a pleasant scent are grouped in twos or threes in the leaf axils. Secretory pockets containing essential oil punctuate the petals.
