This end-of-year beer is produced exclusively for the festive season, in order to savor the flavors and warm notes perfect for Winter. In the 18th century, the methods of manufacture and brewing were different from today. At that time, it was difficult to preserve the raw materials of beer without changing the taste. Preservation methods were not as easy as they are today. Beer, don't waste it! So the brewers kept the raw materials and ingredients that remained after the summer and spring brewing to create an atypical brew in October. Originally called “October beer”, because it was brewed in October, it was ready to taste in December, which is why we then baptized it “Christmas beer”.
