Fiano Chardonnay - Organic White Wine 2023

Classification: I.G.P.   White Salento.   Grapes: Fiano-Chardonnay.   Production area: Cellino San Marco (BR) – San Donaci (BR).   Training system: espalier (5.000 plants per ha).   Harvest period: second ten days of August.   Vinification: the grapes are destemmed, pressed and softly pressed.   The must thus obtained is cooled to 10° C to allow natural clarification.   Alcoholic fermentation takes place in stainless steel tanks at 15° C.   Refinement: in steel tanks until bottling.
