Classification: Quality sparkling wine Grapes: Malvasia Nera / Aleatico. Production area: Cellino San Marco (BR), San Donaci (BR). Training system: Espalier (5.000 plants per ha). Vinification: The grapes are left to macerate for 12-14 hours in order to extract the right shade of color and aromatic substances from the skins. The flower must is fermented at 14-15°C in thermo-conditioned stainless steel containers until the end of the alcoholic fermentation. Refinement: Refinement and storage in steel for three months with the use of batonnage. Second fermentation: Charmat method in steel autoclaves for 30 days, with the use of batonnage in order to favor the transfer of noble substances by the yeasts.
