Classification: D.O.P. Salice Salentino Reserve. Grapes: 80% Negroamaro – 20% Malvasia. Production area: Cellino San Marco (BR). Training system: Sapling (5.000 plants per ha). Harvest period: first/second ten days of September. Vinification: pressing and destemming, maceration in contact with the skins for approximately 5-8 days, soft pressing and end fermentation in steel tanks at a controlled temperature; malolactic fermentation carried out in Allier barriques and maturation on fine lees for approximately 12 months. Aging: stainless steel – barriques.
