Classification: I.G.P. Negroamaro Salento Rosso Appassimento. Grapes: Negroamaro 100%. Production area: Cellino San Marco (BR). Training system: Sapling. Harvest period: to ensure overripeness on the vine, the harvest period moves around the first ten days of October. The grapes are harvested by hand with careful selection of the bunches. Vinification: after pressing and destemming, 12-15 days are left on the skins. This is followed by drawing off, malolactic fermentation and aging in barrique. Aging: stainless steel – barriques.
