Classification: I.G.P. Red Salento. Grapes: 100% black Malvasia. Production area: Cellino San Marco (BR), San Donaci (BR). Training system: Sapling (4.500 vines per ha). Harvest period: first ten days of October. Vinification: after pressing and destemming, the must remains in maceration with the skins for 10-15 days at a thermo-controlled temperature of 24° – 25°C; followed by racking and soft pressing at the end of fermentation. Refinement: in steel tanks until bottling.
