Classification: I.G.P. White Salento. Grapes: Malvasia Bianca 100%. Production area: Cellino San Marco (BR) – San Donaci (BR). Training system: Espalier (5.000 plants per ha). Harvest period: First ten days of September. Vinification: The grapes are destemmed, pressed and softly pressed. The must thus obtained is cooled to 10° C to allow natural clarification. Alcoholic fermentation takes place in stainless steel tanks at 15° C. Aging: In steel tanks until bottling.
