Classification: I.G.P. Salento. Grapes: Verdeca 100%. Production area: San Donaci (BR). Training system: espalier and sapling (5.000 stumps per ha) Harvest period: first ten days of September. Vinification: the grapes are destemmed, pressed and softly pressed. The must thus obtained is cooled to 10° C to allow natural clarification. Alcoholic fermentation takes place in stainless steel tanks at 15° C. Refinement: in steel tanks until bottling.
