Classification: Quality sparkling wine Grapes:: Verdeca – Malvasia Bianca. Production area: Cellino San Marco (BR), San Donaci (BR). Training system: Espalier (5.000 plants per ha). Vinification: Soft pressing, static decantation of the must, fermentation of the flower must at a controlled temperature (15-17°C) with selected yeasts. Refinement: Refinement and rest in steel for three months with the use of batonnage. Second fermentation: Charmat method in steel autoclaves for 30 days, with the use of batonnage in order to favor the transfer of noble substances by the yeasts.
