Classification: D.O.P. Salice Salentino Rosso. Grapes: Negroamaro 80% – Malvasia nera 20%. Production area: Cellino San Marco (BR), Salice Salentino (LE). Training system: Sapling and espalier (4.500 vines per ha). Harvest period: Third ten days of September. Vinification: After pressing and destemming, the must it remains in maceration with the skins for 6-7 days at a thermo-controlled temperature of 24°-25°C. Aging: In steel tanks until bottling.
