Classification: Puglia I.G.P. Aleatico. Grapes: Aleatico 100%. Production area: Cellino San Marco (BR). Harvest period: to have overripeness on the plant, the harvest period moves around the third ten days of September. The grapes are harvested by hand with careful selection of the bunches. Vinification: after pressing and destemming, 12-15 days are left on the skins. This is followed by drawing off and malolactic fermentation and aging in barrique. Aging: stainless steel – barrique.
