
Classification: Salento I.G.P. Rosé. Grapes: Primitivo 100%. Production area: Cellino San Marco (BR). Training system: Sapling and espalier (4.000/5.000 plants per ha). Harvest period: first/second ten days of September. Vinification: manual night harvest with careful selection of the bunches. After destemming and pressing, maceration of the must with the skins at a temperature of 0-2°C for 8-12 hours and then soft pressing. The free-run must is clarified, decanted, the selected yeasts are inoculated and fermentation is started which will last no less than 20 days at a temperature of 14-16°C. Refinement: once fermentation is complete, the first racking is carried out and the wine will be stored on the fine lees in the steel silos.
