Angelo D'Uva company Safinim IGT Terre degli Osci Rosato Angelo D'Uva, Grape variety: Montepulciano. Training system: Counter-espalier with Guyot pruning. Planting density: 4000 vines / ha. Soil: clayey - calcareous. Recommended serving temperature: 8 – 10°C. Vinification: Destemming, cold maceration for 12 hours, soft pressing. Slow fermentation at a controlled temperature of 11°C in thermoregulated tanks. Refinement: in steel for 3 months. Organoleptic description: Pale cherry colour. On the nose there are hints of rose and cherry. Lively in the mouth, fresh but harmonious, fine and persistent. Curiosity: Safinim, in the Oscan language, is the name with which the Samnites defined their territory as "Sannio".
