Colle Sereno Company ANALYTICAL DATA Alcohol 13.5% vol Grape variety: Aglianico Denomination: Terre degli Osci IGP Aglianico Soil type: Calcareous / clayey, hill 400 meters above sea level Training system: Spurred cordon Defense methods: Biological, integrated pest control with controlled environmental impact Harvest period: Second ten days of October Method of collection: Manual Vinification: The fermentation of the Aglianico grapes takes place with maceration on the skins at a temperature between 12° and 28° C, in thermo-controlled stainless steel fermenters. The pumping over takes place periodically, for a period of about 15/20 days, in order to extract colors and aromas from the skins. The racking follows Refinement: The maturation takes place for at least 12-18 months in stainless steel tanks, followed by a stop in oak tonneau from 18 to 24 months. SENSORY ANALYSIS Colour: Intense ruby red with purple reflections Bouquet: Intense and complex; red pulp fruits, cherry and black cherry, balsamic and spicy notes Taste: Warm, persistent, elegantly tannic, spicy finish typical of the varietal Pairings: To be served in combination with important first courses, aged cheeses, truffles, red meats and dishes with a strong taste Serving temperature: 18 – 20 °C
