Varieties: Nero D'avola, Nocera, Nerello Mascalese Agriculture: organic with the use of biodynamic treatments, no chemical interventions Harvest: early in the morning in small 16kg boxes, hand-selected grapes Vinification technique: prolonged maceration on the skins at a variable controlled temperature, depending on the vinification phases, between 18° and 24° with pumping over, delestage and subsequent malolactic fermentation Refinement: 12 months in 5hl French oak tonneaux THE WINE Mamertino Rosso DOC has a ruby red color and an aroma characterized by sweet notes and hints of plum and cherry jam. The taste is velvety and balanced It is recommended to accompany the Mamertino Rosso DOC with first courses with meat rugù, with red meats and aged cheeses
