Training system: Spurred cordon Defense methods: Biological, integrated pest control with controlled environmental impact Harvest period: Second ten days of October Method of collection: Manual Vinification: The fermentation of the Tintilia grapes takes place with maceration on the skins at a temperature between 12° and 28° C, in thermo-controlled stainless steel fermenters. The pumping over takes place periodically, for a period of about 8/10 days, in order to extract colors and aromas from the skins. The racking follows Refinement: The maturation takes place for at least 24 months in stainless steel tanks before being bottled SENSORY ANALYSIS Colour: Intense ruby red with purple reflections Bouquet: Intense and complex; red-fleshed fruits, black cherry in alcohol, dried plums. Balsamic notes of licorice, cloves and spicy hints (pepper) Taste: Warm, persistent, velvety tannins, with hazelnuts and black pepper Pairings: To be served in combination with important first courses, aged cheeses, truffles, red meats and dishes with a strong taste Serving temperature: 18 – 20 °C
