Classification: I.G.P. Red Salento. Grapes: Negroamaro 100%. Production area: Cellino San Marco (BR). Training system: espalier (4.500 vines per ha). Harvest period: second ten days of September. Vinification: after pressing and destemming, the must remains in maceration with the skins for 6-7 days at a thermo-controlled temperature of 24-25°C. Refinement: in steel tanks until bottling.
