Classification: D.O.P. Salice Salentino Reserve. Grapes: Negroamaro 80% – Malvasia nera 20%. Production area: Cellino San Marco (BR), Salice Salentino (LE). Training system: sapling and espalier (4.500 vines per ha). Harvest period: third ten days of September. Vinification: after pressing and destemming, the must remains in maceration with the skins for 6-7 days at a thermo-controlled temperature of 24°-25°C. Aging: once malolactic fermentation is complete, the wine remains in second and third passage barriques for approximately 9 months and in steel until the completion of the refinement period required by the production specifications.
