Classification: I.G.P. Puglia Red. Grapes: Aleatico 100%. Production area: Cellino San Marco (BR) Harvest period: to ensure overripeness on the vine, the harvest period moves around the first ten days of October. The grapes are harvested by hand with careful selection of the bunches. Vinification: after pressing and destemming, the must remains in maceration with the skins for 10-12 days at a thermo-controlled temperature of 24° – 25°C; followed by racking and soft pressing at the end of fermentation. Refinement: in steel tanks until bottling.
