Classification: Fiano/Malvasia Bianca I.G.P. Salento brut quality sparkling wine. Grapes: Fiano Minutolo 50% Malvasia Bianca 50%. Production area: Cellino San Marco (BR). Vinification: Harvesting of the grapes by hand in boxes followed by crushing and destemming, and then soft pressing. The free-run must is statically decanted at a low temperature, followed by the start of the first alcoholic fermentation through the use of selected yeasts. Fermentation takes place in steel tanks and at a controlled temperature of around 14-16°C. Fermentation continues in the bottle, refining on its own yeasts until disgorgement. Serving temperature: 8 °C.
