Classification: I.G.P. Salento Chardonnay. Grapes: 100% pure Chardonnay. Production area: Cellino San Marco (BR). Training system: espalier (3.800/4.500 vines per ha). Harvest period: second/third ten days of September. Vinification: soft pressing and static sedimentation at low temperature; fermentation and aging in 225 liter Allier oak barriques, 20% new and the remainder one year old. Aging: stainless steel – barriques.
